Californian Blueberry Pancakes

Makes 12 pancakes (Vegetarian)
1 medium free range egg
150ml plain yoghurt
150ml milk
2 tablespoons vegetable oil
100g plain flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
good pinch ground nutmeg
175g fresh or frozen blueberries (defrosted)
In a large bowl beat the egg, yogurt, milk and oil. Stir in the flour, sugar, baking powder, baking soda, salt and nutmeg. Mix until just blended, batter may be slightly lumpy.
Heat a greased griddle or non-stick frying pan over a medium heat.
Pour a tablespoon of batter onto the hot griddle. Sprinkle the pancake with the blueberries, reserving a few to sprinkle over the top, wait for it to bubble, then flip it over. Keep warm while you cook the remainder.
Serve in a stack with butter and maple syrup.
