Breakfast and Brunch in Cameroon - an overview
In Cameroon breakfast often consists of beignets (a type of doughnut with no hole) either eaten with beans or dipped in bouilli (a sticky, sugary liquid made from maize). Other dishes include fried eggs and omelettes with beans, spaghetti, noodles or sardines.

Breakfast Recipes from Cameroon
Beignets 120ml water
60g unsalted butter
1 tablespoon sugar
1/2 teaspoon salt
75g plain flour
4 large eggs
2 teaspoons vanilla extract
icing sugar to dust.
Combine the water, butter, sugar and salt in a saucepan and bring to the boil. Add the flour and stir like mad until it all comes together and looks a little shiny. Continue to cook and stir for 2-3 minutes. Remove the pan from the heat and transfer to a bowl. Add the eggs, one at a time and beating each one in for a couple of minutes. Then add the vanilla.
Heat a deep fat fryer to 185C/365F and carefully drop in a tablespoon of mixture at a time. Fry 4-5 beignets at a time until puffy and golden all over. Drain on kitchen paper and dust with icing sugar. Repeat until all the mixture is used up.
